Homemade Brown Sugar

Yes, this recipe is for brown sugar.  Did you know that you can make your own at home?  You can make either light or dark brown sugar depending on how much molasses you add.  Not only is it more economical than buying it at the store, but it's also incredibly convenient and it stays fresher longer. It even tastes better!  Brown sugar always seems to be the one ingredient I frequently run out of when I'm ready to bake.  Now, instead of making a last-minute trip to the store, I simply mix up a batch myself and get right back to baking!

I use more dark brown sugar in the Fall and Winter months and light brown sugar in the Spring and Summer.

For Dark Brown Sugar:
1 cup sugar
2 TBS unsulphured molasses

For Light Brown Sugar:
1 cup sugar
1 TBS unsulphured molasses

Combine the sugar and molasses in a bowl. Mix using an electric mixer until there are no clumps and the brown sugar is uniform in color.  Store in an air-tight container.  This will last for months.

I usually make about 8 cups of brown sugar at a time....I have done the math for you:

Dark brown sugar:   8 cups of sugar and 1 cup of molasses
Light brown sugar:   8 cups of sugar and 1/2 cup of molasses

Sometimes I don't even measure. Once you have made this enough, you can tell by the color of the brown sugar when you have added a good amount of the molasses.  You really don't need to be exact in the measurements; it's a matter of taste and preference.
