Peanut Butter Chocolate Bars

You can mix these bars up in no time.  Chances are you have all the ingredients in your cupboard.










1 pkg. (18.5 oz) plain butter recipe golden cake mix or plain yellow or vanilla cake mix
1 cup smooth or crunchy peanut butter
8 TBS butter, melted
2 large eggs
1 pkg (12 oz) semisweet chocolate chips
1 can (14 oz) sweetened condensed milk
2 tsp. vanilla extract

Preheat oven to 350. 

Combine cake mix, peanut butter, butter and eggs in a large mixing bowl and beat with an electric mixer on low speed until the ingredients are incorporated, one minute.  The mixture will be thick.  Measure about 1 1/2 cups of this mixture and set it aside for the topping.  Place the remaining cake mix mixture in a 9 x 13 baking pan, pressing it over the bottom of the pan with your fingers.  Set pan aside.

Place chocolate chips and condensed milk in a medium size glass bowl and microwave on high power for one minute.  Add the vanilla and stir until the chocolate has melted and the mixture is smooth and creamy.  Pour the chocolate mixture over the crust, spreading it evenly with a rubber spatula so it reaches the sides.  Using your fingers, crumble the reserved topping and scatter it over the chocolate.

Bake the bars at 350 for 30-35 minutes or until they are golden brown around the edges and on top.  Cool bars on a wire rack for 30 minutes before cutting.

Makes 30 bars
